LIME COCONUT ENERGY BITES


INGREDIENTS

1 cup raw cashews
1 cup packed pitted dates (soak in warm water first if very dry)
2/3 cup unsweetened fine coconut
2 tbsp fresh lime juice
1 tsp fresh grated lime zest

INSTRUCTIONS

Place the cashews in a food processor and mix until mostly broken down.

Add the dates and process until a dough forms.

Add the coconut and lime and process until well mixed.

Roll into balls and store in the fridge.

Makes 15 balls.
